Fish maw is the dried swim bladder collected from locally landed fish, cleaned, shaped and sun-dried before grading. It is valued in Chinese soups and braised dishes for its texture and gelatine content, and is graded by piece weight, thickness and colour. Because it depends on the size of the fish landed, larger pieces are always limited.
