Salted fish is produced from locally landed species using salting and sun-drying, and is used across Chinese, Malay and Peranakan cooking for fried rice, claypot dishes and sambal. Different species give different texture and saltiness, so buyers usually specify the raw material as well as the grade. Whole fish and cut pieces are both available.
