Threadfin is a soft, buttery estuarine fish that Chinese and Malay kitchens both value, especially for steaming, pan-frying and confinement cooking. Larger fish are commonly cut into thick steaks; smaller sizes go to the salted-fish trade. Supply comes from the brackish waters around the Sarawak delta.
