Tenggiri is the workhorse of the Malaysian trade: dense, low-bone flesh that cuts cleanly into steaks and scrapes into fish paste for otak-otak, keropok and fish balls. Large fish are supplied whole or as centre-cut steaks and loins. It is one of the most consistent volume lines out of Sarawak.
