Terubok is the signature fish of Sarawak, landed mainly off the river mouths near Kuching and Betong. The flesh is soft, oily and sweet, and roe-bearing females are the most sought-after grade for the Chinese New Year and festive trade. It is usually steamed whole with ginger and preserved wine, or salted into Terubok Masin.
