Cuttlefish has a thicker, crunchier mantle than squid, which is why kitchens use it for slicing, scoring and hotpot. It is cleaned by hand, with the bone, ink sac and skin removed to buyer preference. Whole cleaned pieces are graded by weight and packed in interleaved blocks to protect shape.
